North Carolina BBQ is more than food, it’s a regional cultural heritage. There are two kinds of Carolina BBQ, Eastern Style and Western, or “Lexington” Style. The hallmark of Carolina BBQ is slow-cooked pork with a vinegar-based “sauce”. The Western Style has more of a tomato-vinegar sauce. Most of what you will find around the Triangle area is Eastern Style.
